The history of Pizzolato dates back more than five generations 🧬, to a time when the Pizzolato family worked in agriculture and cultivated fruit and wine grapes 🍑🍷.

In 1981, Settimo Pizzolato began focusing on organic winemaking — one of the first initiatives of its kind in Italy 🥇.

🍷 Types of Organic Wine 🍾

La Cantina Pizzolato offers a wide range of wines, suitable for every occasion:

🌸 Variety Without Compromise

All wines are certified organic and vegan, meaning they are made without chemicals or animal-derived products 🐾 — a choice that respects not only nature but also the health of the consumer 🍃.

🍾 PROSECCO is an Italian sparkling wine produced mainly in north-eastern Italy — in the regions of Veneto and Friuli-Venezia Giulia.

DOC → stands for Denominazione di Origine Controllata, meaning Controlled Designation of Origin. This guarantees that the wine is produced in a specific geographical area and complies with particular quality standards.

DOCG – subject to stricter controls and produced in a smaller designated area, such as Conegliano Valdobbiadene.

🍇 Grape Variety:

The main grape variety used for Prosecco is Glera — a light, aromatic white grape variety with floral and fruity notes.

Spumante – fully sparkling, with clearly defined bubbles
Frizzante – lightly sparkling, with less carbonation
Tranquillo – completely still, without bubbles (rarely found)

🥂 Production Method:

Unlike Champagne, which undergoes its second fermentation in the bottle, Prosecco is made using the Charmat method — in large stainless-steel tanks, which preserve its freshness and fruity character.

Light, fresh and fruity (apple, pear, peach and citrus), with floral notes. It is generally less full-bodied and more affordable than Champagne.

🌱 Wines Made from Sustainable Grape Varieties (PIWI)

PIWI grape varieties are naturally resistant to fungal diseases 🍃, allowing for significantly fewer treatments and minimal intervention in nature 🌍.

These wines are the result of many years of research and innovation in sustainable viticulture, combining quality with care for the environment 🌿🔬.

PIWI Grape Varieties: Towards More Sustainable Agriculture!

PIWI vines are developed through cross-pollination between Vitis vinifera and American grapevines. Through successive cross-breeding, varieties have been developed that can naturally resist fungal diseases such as powdery mildew and downy mildew.

The first experiments were carried out in France between 1880 and 1935, but it was not until 1950 that more complex crosses of the PIWI vines we know today began to be developed.

Thanks to their high resistance to typical vine diseases such as powdery mildew and downy mildew, treatments can be reduced by 60 to 99 per cent annually, contributing to increasingly sustainable agriculture.

PIWI varieties produce wines with characteristics that are slightly different from those of traditional grape varieties. They are generally more aromatic, with distinctive fruity and floral notes, more intense flavours and greater resilience.
