🍾 “Italy’s Diamond Perfection” – The Story of 47 Anno Domini and the Brilliance of Their DIAMANTE Collection ✨

A colourful, inspiring, and delicious story about one of Italy’s most elegant organic and vegan wineries.

🌿 When Nature Meets Design

In the heart of the picturesque Italian countryside, surrounded by fragrant vineyards and golden sunshine, a winery was born that represents more than just tradition – it embodies character, style, and philosophy.

This is 47 Anno Domini – a place where wine becomes art and every bottle tells a story. 🍇✨

The winery is renowned for its modern approach, organic production, vegan philosophy, and luxurious designer collections.

But one collection shines brighter than all the rest – the DIAMANTE Collection 💎.

Are you ready to immerse yourself in the world of Italian organic sparkling wines?

Let's begin! 🍾🌸

🏛️ The Story of 47 Anno Domini – From the Ancient Via Claudia Augusta to Contemporary Wine Design

✨ The name “47 Anno Domini” is no coincidence. It refers to 47 AD, when the Romans completed the ancient Via Claudia Augusta, which passed through the very lands where the winery's vineyards are located today. A history deeply rooted in the origins of its wines!

🌿 A Family Tradition

From Grandfather Battista through successive generations, the land and the love of winemaking have been passed down like a treasured legacy. Today, the winery combines:

✔ Organic production;
✔ Minimal environmental impact;
✔ Solar energy;
✔ Modern architecture featuring wood, steel, and glass;
✔ Wines produced with ethics and respect for nature.

They don't simply make wine.

👉 They create an experience.
👉 An image.
👉 A style.

💎 DIAMANTE – The Brilliance 47 Anno Domini

The DIAMANTE Collection represents the pinnacle of their organic and vegan philosophy. Elegant bottles, sparkling wines of crystal clarity, and exceptional sophistication.

We present the five jewels of the collection:

✨ 1. Prosecco DOC Spumante Bio Vegan Extra-Dry

🍏 Fruity, fresh, elegant – the classic Prosecco in an organic version!

Origin: The provinces of Treviso, Padua, Belluno, Venice, Vicenza, Gorizia, Pordenone, Trieste, and Udine
🍇 Grape Variety: 85–100% Glera
📌 Alcohol Content: 11%

Description

Carefully harvested Glera Bio-Vegan grapes arrive at the winery, where they are transformed into must and undergo primary fermentation. This is followed by settling stages to clarify the wine, which will later become Spumante (sparkling wine) through the secondary sparkling process.

🌸 Colour: Straw yellow, with fine and persistent bubbles.
👃 Bouquet: Authentic, crisp, refined aromas with several fruity and floral notes.
👄 Taste: A pleasant, lingering, tactile sensation of effervescence, followed by an appealing harmony that balances acidity and sweetness. Excellent length and persistence.

🍽️ Food Pairings: Excellent on its own as an aperitif or served with a variety of appetisers. Pairs beautifully with all fish dishes, pasta, and risotto, especially vegetable-based dishes. Also an excellent choice with white meat.

Serving Temperature: 4–6°C.

✨ 2. Prosecco DOC Spumante Bio Vegan Extra-Brut

🍏 Extra-dry, modern, and exceptionally aromatic organic sparkling wine.

Origin: The provinces of Treviso, Padua, Belluno, Venice, Vicenza, Gorizia, Pordenone, Trieste, and Udine
🍇 Grape Variety: 85–100% Glera
📌 Alcohol Content: 11%

Description

After careful harvesting, the Glera grapes, grown using organic and vegan farming methods, arrive at the winery, where they are pressed. The must undergoes initial fermentation, followed by temperature-controlled processing to preserve its aromas.

The primary fermentation is followed by 3–4 racking stages to clarify the wine before it undergoes secondary fermentation in an autoclave. During the sparkling process, the wine reaches an alcohol content of 11%.

Residual sugar levels are maintained at approximately 2 g to create a very dry Prosecco DOC Spumante with refreshing acidity.

🌸 Colour: Straw yellow, with a fine and persistent perlage.
👃 Bouquet: Typical Glera grape aromas, with pronounced fruity and floral notes, including a hint of green apple.
👄 Taste: A lingering tactile sensation on the palate, accompanied by the presence of carbon dioxide. The wine retains remarkable freshness thanks to its low residual sugar content.

🍽️ Food Pairings: Ideal with raw fish appetisers and an excellent match for seafood dishes, including fish.

Serving Temperature: 4–6°C.

✨ 3. Gran Cuvée Vino Bianco Spumante Bio Vegan
🍏 Organic sparkling white wine, delicate, elegant, and persistent.

Origin: Veneto
🍇 Grape Variety: A cuvée of white wines from vineyards located in northeastern Italy
📌 Alcohol Content: 12%

Description

Gentle pressing, separation from the grape skins, and white winemaking, followed by alcoholic fermentation at a controlled temperature, produce the base sparkling wine. It is then stored in stainless steel tanks at 8–10°C.

The sparkling wine base is filtered and transferred to an autoclave, where it is sweetened and selected yeasts are added for secondary fermentation using the Charmat method.

Once the desired pressure is reached, our Glera sparkling wine is cooled and stored at -4°C for cold stabilisation over a period of 15 days. It is then filtered and bottled under pressure to preserve its precious bubbles.

🌸 Colour: Straw yellow with subtle greenish reflections. It develops a pleasant mousse when poured, followed by a fine and persistent perlage.
👃 Bouquet: Delicate and elegant, with an initial presence of fruity notes, especially green and golden apple, followed by floral hints reminiscent of wisteria and dog rose.
👄 Taste: Velvety, fresh, fruity, and lively. Light and smooth, with fine bubbles, a full and harmonious character, excellent acidity, and a pleasant lingering finish. Best enjoyed young.

🍽️ Food Pairings: Excellent on its own as an aperitif or served with a variety of appetisers. Pairs well with all fish dishes, cured meats, pasta, and risotto. Also an excellent match for white meat.

Serving Temperature: 4–6°C.

🌸 4. Prosecco Rosé DOC Spumante Bio Vegan

🍏 Prosecco Rosé Органично пенливо вино с плодови и флорални нотки, идеални мехурчета за приготвяне  на пушени ястия.

🍏 Organic Prosecco Rosé – a sparkling wine with fruity and floral notes, featuring elegant bubbles that make it an ideal companion for smoked dishes.

Origin: The provinces of Treviso, Padua, Belluno, Venice, Vicenza, Gorizia, Pordenone, Trieste, and Udine
🍇 Grape Variety: 85–90% Glera; 10–15% Pinot Noir
📌 Alcohol Content: 11%

Description

When the Glera grapes reach the ideal level of ripeness, they are harvested to achieve balanced acidity and a fresher taste.

They are then transported to the winery, where, after destemming and crushing, they are placed in a gentle press. The must is separated from the skins, cooled, and clarified through flotation.

Yeasts are added to the clear must to initiate alcoholic fermentation at a controlled temperature of 16–18°C.

Once fermentation is complete, the temperature of the new wine is lowered to 8–12°C. After eight days, the first racking takes place, producing the Glera base wine for Prosecco Rosé.

When the Pinot Noir grapes reach perfect ripeness, harvesting begins. The bunches arrive at the winery, where they are destemmed and crushed before being placed in fermentation tanks in contact with their skins.

Alcoholic fermentation takes place at a controlled temperature of 25°C, with scheduled pump-overs and racking every three days. After 5–6 days, the must is racked and pressed, producing the Pinot Noir base wine for Prosecco Rosé.

The Pinot Noir base wine is then blended with the Glera base wine, after which secondary fermentation can begin.

The sparkling wine base is sterile-filtered. The sugars required for secondary fermentation and selected yeasts suitable for sparkling wine production are added before the wine is transferred to an autoclave for secondary fermentation and to achieve the desired pressure.

Once the desired pressure is reached, the wine is cooled to -2 to 0°C and left to age on its lees, with brief bâtonnage. After 60 days, the wine can be filtered and bottled.

🌸 Colour: Pale yet bright pink, with a pleasant mousse and persistent perlage.
👃 Bouquet: Delicate and elegant, with fruity and floral notes typical of the grape varieties used.
👄 Taste: Fresh and distinctive, with excellent length and persistence. An interesting harmony between aroma and bouquet.

🍽️ Food Pairings: An ideal match for smoked dishes, especially salmon, freshwater river trout, and mozzarella.

Serving Temperature: 4–6°C.

🌺 5. Spumante Rosato Bio Vegan
🍏Органично пенливо розе с вкусен розов цвят, обогатен с отблясъци на сьомга, флоралният аромат се  съчетава със свежия вкус, подкрепен от черните плодове на гроздето, винифицирано в розе.

🍏 Organic sparkling rosé with a beautiful pink colour enhanced by salmon reflections. Its floral bouquet combines with a fresh taste, supported by the dark-fruit character of the grapes used to produce this rosé wine.

Origin: The provinces of Treviso, Padua, Belluno, Venice, Vicenza, Gorizia, Pordenone, Trieste, and Udine
🍇 Grape Varieties: Raboso and Pinot Noir
📌 Alcohol Content: 11%

Description

The grapes selected for this sparkling wine are harvested and vinified, with fermentation taking place in stainless steel tanks at a controlled temperature of 16–18°C.

Once fermentation is complete, the wine is racked and stored at a temperature of 6–8°C.

At the beginning of December, our winemakers select the cuvée, which is then transferred to an autoclave for secondary fermentation throughout the year.

Once secondary fermentation is complete, the temperature of our organic Extra Dry sparkling rosé is brought down to 0°C to stop fermentation and achieve tartaric stability.

During this period, the yeasts that have settled at the bottom of the autoclave are periodically stirred back into suspension. Approximately one month after secondary fermentation, the sparkling wine is filtered and prepared for isobaric bottling.

🌸 Colour: Intriguing pink shades with delicate salmon reflections, fine and persistent perlage.
👃 Bouquet: Elegant floral notes, followed by hints of small red berries.
👄 Taste: An excellent first impression, with a pleasant sensation created by the presence of carbon dioxide. The acidity and sweetness are beautifully integrated, creating a balanced and harmonious finish with an interesting persistence.

🍽️ Food Pairings: Excellent as an aperitif. Pairs beautifully with raw meat dishes, marinated fish, and shellfish. Also a wonderful match for prosciutto crudo.

Serving Temperature: 4–6°C.

Description
When the Glera grapes have reached the perfect point of ripeness they are harvested to maintain their acidic properties together with a superior gustatory freshness and then taken to the winemaking cellar where, after having been de-stemmed and crushed, they are placed in a soft press and the must is separated from the skins, cooled and clarified by floatation. Yeasts are added to the clear must to start the alcoholic fermentation at a controlled temperature of 16-18°C. Once this is finished, the temperature of the new wine is lowered to 8-12°C and after 8 days the first racking is carried out, obtaining the Glera base wine for the rosé Prosecco. When the Pinot Noir grapes are perfectly ripe, their harvest begins. The grapes arrive in the cellar to be de-stemmed and crushed and placed in the vats to ferment together with their skins. Alcoholic fermentation takes place at a controlled temperature of 25°C, pump overs are scheduled and a delestage is performed every 3 days. After 5-6 days the racking and pressing of the pomace is carried out. In this way we obtain the Pinot Nero base wine for the rosé Prosecco. The Pinot Nero base is combined with the Glera base and we can proceed to the second fermentation. The sparkling base wine is sterile filtered, and after the addition of sugars necessary for the second fermentation and specially selected yeasts suitable for the production of sparkling wines, it is placed in an autoclave to re-ferment and reach the desired overpressure. Once the desired pressure is reached, it is cooled to -2-0°C and matured with the yeasts through short batonnages or stirring of the lees. After 60 days the wine can be filtered for bottling.

Tasting note
Colour: soft, bright pink, pleasant presence of foam, persistent perlage.
Bouquet: fine and elegant. Fruity and floral notes typical of the grapes of this origin.
Taste: fresh and characteristic, excellent length and persistence. The olfactory correspondence with what is perceived in the fragrance is interesting.

Combinations
Ideal with smoked dishes, especially salmon, freshwater trout and mozzarella.
